The Inertia

This Green Buddha Bowl is a quick, easy vegetarian dinner. Whether you’re running late, or you just don’t feel like putting much effort into cooking, this is the perfect solution. It’s packed with greens, protein, and healthy fats, so it will keep you full and energized.

Ingredients

1 avocado

2 heads broccoli, cut into florets

1/2 cup cilantro

1 cup edamame

2 heads swiss chard

4 eggs

3/4 cup salsa verde

Salt and pepper

2 tbsp olive oil

Instructions

-Preheat the oven to 450 degrees. Space out the broccoli on a baking sheet. Drizzle live oil over the top and top with plenty of salt and pepper. Place in the oven and roast for 15-20 minutes until crispy.

-While the broccoli is roasting, pull the leaves off the swiss chard. Add the leaves, a 1/4 cup of water, and plenty of salt and pepper to a medium pot. Cover and place over medium heat. Stir occasionally and continue heating until the chard wilts.

-Warm edamame in the microwave until heated through.

-Dive the broccoli, chard, and edamame between four bowls equally. Fan avocado slices over the veggies in each bowl. Top each with a warm fried egg, chopped cilantro, and salt and pepper. Enjoy!
