If you have a major sweet tooth like I do, it can be hard to stay on track for eating healthy without incorporating some kind of treat into your diet every once in a while. This TWO INGREDIENT peanut butter fudge is the perfect sugar fix that will brighten up your dinner without setting you too far back in the health department. Although rich, this fudge skips out on the typical ingredients (butter, sugar, milk, and chocolate…not exactly superfoods) and turns instead to Medjool dates and peanut butter. By all means, it’s still a dessert, and it comes with all the pros (taste, happiness, joy…) and cons (sugar, calories, fat…) of a dessert, but at least it incorporates the natural sugars of the dates and the protein protein of the peanut butter. It’s certainly not guilt-free, but it’s definitely guilt-reduced. Enjoy!
Ingredients
12 Medjool dates
1 cup of natural peanut butter
Method
-Combine the two ingredients in a food processor until they become a doughy ball.
-Scoop out of the processor and firmly press the dough into a parchment paper lined pan.
-Place pan in the freezer for about 2 hours.
-Cut into squares and serve.
Note: This recipe makes 12 fudge squares. Also, fudge will keep in the refrigerator for up to 1 week and in the freezer for up to a month.
