Searching for healthy but tasty dessert? Look no further than this Chia seed pudding. Too often, chia gets a bad rap, and honestly, for a good reason. If you don’t put a little extra energy into working with Chia, your pudding tends to taste like gritty mush. However, with just 10 extra minutes of effort, you can make a dessert you’ll actually enjoy. This recipe makes a great breakfast treat if you serve it cold with fresh apples, but follow the directions below for a richer, warm, dessert pudding.
Time: 10 minutes
Servings: 1-2
Ingredients:
2 cups coconut milk
1/2 tsp vanilla
2/3 cup chia seeds
2 tbsp unsweetened coconut flakes
2 apples, cored and chopped
2 tsp cinnamon
1 tsp maple syrup
Directions:
-Start by warming up the apples. Sauté them in a small saucepan with cinnamon and a tsp of maple syrup. Heat and stir until browned.
-Heating up the coconut milk and vanilla extract in a saucepan. Do not boil, but warm for about 3 minutes over low to medium heat.
-Add the chia seeds to a decent-sized cereal bowl. Pour warm milk into the bowl. Stir continuously for about 3 minutes, and then allow the mixture to sit for another 2 minutes. This allows the seeds to fully absorb the milk.
-Top with sautéed apples and sprinkle with coconut flakes and cinnamon. Enjoy!
