The Inertia

As a professional athlete, Bethany Hamilton is all about putting healthy, nutritious foods into her body. But from time to time, even the mother of four wants a sweet treat. In this case, a healthy energizing treat. In the above video, Hamilton, alongside her husband Adam Dirks, share how to make their “mana bars.”

Ingredients:

-Two cups raw almonds

-1/2 cup ground flaxseed

-1/2 cup currants, dates, and raisins

-1/2 cup shredded coconut

-1 1/2 cup unsalted almond butter

-Three tablespoons honey

-Two teaspoons vanilla extract

-1/2 cup melted coconut oil

-1/2 teaspoon sea salt

-Four ounces of dark chocolate

Directions:

-Mix almonds, flaxseeds, currants, dates, raisins, and shredded coconut in a food processor. Process until coarsely ground.

-Add in almond butter, honey, vanilla extra , coconut oil, and sea salt and pulse into a coarse paste.

-Spread the mixture flat across the bottom of a pan.

-Use a double boiler to melt the chocolate.

-Spread the melted chocolate over the coarse paste in your pan.

-Refrigerate for 30 minutes.

-Cut into squares and enjoy!
