The trickiest thing about breakfast usually isn’t making it. It’s about finding the time to eat it. No matter how “portable” that piece of toast or yogurt parfait is, somehow it always ends up on your shirt while you eat in the car. Consider the daily breakfast dilemma solved with this genius breakfast popsicle recipe. Wrap a paper towel around the base of one of these bad boys, and you’re good to go. Not to mention that with yogurt, granola, and figs, it’s a hearty and healthy breakfast as well.
Ingredients
Makes 6 Pops
1 cup yogurt
1/4 cup heavy cream
3 tablespoons honey
3/4 cups granola
1 1/2 figs
Instructions
-Mix together the yogurt, cream, and honey.
-Scoop out a quarter cup of the yogurt mixture. Use it to coat the granola evenly (this will help the granola freeze).
-Slice the figs into thin strips about a quarter inch in width. Add one to each side of the popsicle mold. Push with knife to make sure the fruit stays at the edges.
-Pour a generous scoop of yogurt into the mold. Follow with a scoop of granola. Make sure the granola is mashed into the yogurt mix.
-Freeze overnight and enjoy in the morning!
