The Inertia

Want to impress your date?  Try this recipe. It’s easy, fast, and it will knock her off her feet (don’t worry girls, it will impress him, too!).  This California spin on an Italian classic is delicious, healthy and perfect for a night in. Combine this with some garlic bread, a small salad (if you’re feeling particularly energetic), a bottle of wine and you will be one lucky guy!

AVOCADO PESTO PASTA

Prep. Time:  30 min.

Cook:  1 package of brown rice pasta in a sauce pan

let pasta cook on stove for ten minutes

Mix:     (in a food processor or blender)

1 bunch fresh basil
½ cup pine nuts
2 avocados
2 tablespoon lemon juice
½ cup olive oil
3 cloves garlic
sea salt

pepper

Combine:                 Pesto with pasta in a large bowl

Add:                 A few gloves of fresh basil

Sea salt & black pepper

Avocados:

–            High in Vitamin E, an antioxidant that helps protect our body from many chronic diseases, such as cancer, heart disease, and diabetes
