The Inertia

Ok, I know that ice cream isn’t healthy, but this isn’t technically ice cream. I mean, look at the ingredients. It’s basically just fruit and almond milk served in the fluffiest, most wonderful way possible. The next time you’re craving something sweet, whip up this super simple, healthy treat.

Ingredients

Ice Cream
– 3 frozen bananas, ripe and spotty before freezing
– 1/4 cup unsweetened almond milk
– 1/2 cup frozen blueberries
– 1 pinch pure vanilla powder

Blueberry Sauce
– 3 tbsp mashed blueberries or blueberry jam

Toppings
– Coconut chips

Instructions

-Place all ice cream ingredients with the exception of almond milk in a food processor.
-Blend on high until all of the frozen banana coins look like tiny crumbles. This should take roughly one minute.
-Stop to scrape down the sides with a spatula if necessary. Continue to blend on high, and slowly add in the almond milk, little by little. Do this as you continually blend.
-Blend until you get a wonderfully fluffy ice cream. Scoop large spoonfuls of ice cream into a glass jar and layer with mashed blueberries. Then top with coconut chips and serve immediately!
