Eggs have protein; avocados have healthy fats. In combination, the two make for an unstoppable breakfast, or for a really great meal any time of the day. This recipe from Pizza Steel couldn’t be any simpler, but it’s a timeless classic that is good at any hour.
Ingredients
-2 slices bread
-1/2 avocado, crushed with lime juice
-2 oz fresh mozzarella
-2 eggs soft scrambled
-butter or margarine
Instructions
-Lightly scramble two eggs in a medium pan.
-Butter two slices of bread on one side.
-On one piece of bread (butter side down), layer fresh mozzarella, avocado , and scrambled eggs on top. Top with second slice of bread (butter side up).
-Place sandwich on a steel baking griddle or cast iron pan which has been preheated to medium heat.
-Cook for 5 minutes on one side and then flip. Repeat until browned evenly on both sides.
