The Inertia

This recipe from Minimalist Baker takes only 5 minutes prep time and it requires just 5 ingredients. That makes this insane, protein packed breakfast about as time consuming as pulling toaster waffles out of the freezer. Make this recipe the night before, then top with fresh fruit in the morning. Breakfast never looked so good.

Ingredients

Oats

1/2 cup unsweetened plain almond milk

3/4 tbsp chia seeds

2 tbsp natural salted peanut or almond butter (pick crunchy or creamy, your choice)

1 tbsp maple syrup

1/2 cup rolled oats (buy gluten free rolled oats if you’re trying to avoid gluten)

Toppings

Sliced banana, strawberries, raspberries

Additional chia seed

Granola

Method

-Add the almond milk, chia seeds, peanut butter, and maple syrup to a small bowl or jar. Stir together with a spoon. Don’t completely mix in the peanut butter if you want PB swirls.

-Add in the oats and stir a little bit more. Make sure the oats are all soaked in almond milk.

-Cover with a lid or wrap. Place the bowl or jar in the refrigerator overnight. The oats need at least 6 hours to soak.

-Open and add toppings the next morning. Serve and enjoy!
